Jamie Oliver is a bit of a hero of the camel. Sure there’s the usual hype, but unlike the “usual’ suspects, Jamie’s food is as delicious as your first ripe peach after a week of no sugar (try it..amazing)
Jamie has always advocated adding a splash of the water the pasta cooks in to the sauce you’re using. However, most pasta comes totally dry, machine made and fails to add the starch to the water that gives shine to sauces.
Usually, you’ll have to go to a fancy providore to find pasta that gives this result. The 2 major supermarkets have organic spaghetti with this valuable property. Moreover, the pasta has a more spongy texture when cooked al dente, and absorbs the sauce readily.
