Baby Peas, love to love you…

Fresh peas are great, and this works well with them too…..

Baby peas freeze well…more importantly they cook in 1 minute from fozen. Just follow the instructions on the pack, and plunge them instantly into iced water.

For the gloss, purée rocket, with a dash of white vinegar and 3 times that dash of extra virgin olive oil, and salt to taste.

A little parmesan, grated, shredded (as here) or shaved goes well…I prefer to serve it cold, even with hot meals. You can also purée it cold or hot as a vegetable, or add chicken or vegetable stock for a great soup (see our risi e bisi recipe in the chicken soup entry)
